Michelin-starred restaurant Tirpse has opened in Hong Kong. After winning Michelin stars for his original Tokyo restaurant in record time, chef Shimizu Yuta moved his Franco-Japanese restaurant, Tirpse, to Hong Kong. Kevin Yiu, founder of Minus Workshop, talks about the project and his interior design philosophy. Kevin Yiu shares some thoughts on his projects: "When I start a project, I usually spend time talking to clients and their operations managers, trying to understand their vision. It's important to build trust with them through these kinds of conversations. Then I look at the valuable qualities of the site and try to maximize those qualities. In this case, it's harbor views, so I hide those views behind the storefront to surprise guests when they enter."
Kevin Yiu adds, "I also do research on the brand and explore its origins and core elements. I noticed that the original Tokyo Turtle has a statue of a white Wolf. I was very interested in this and began to think about the story behind it. From this I created a general concept: an examination of the chef's private dining room. I extracted some interesting elements from this concept, such as the forest and surrounding area, the chef's Wolf companion, his private cabin, his story about the ingredients and the image of a treasure house. These became my mind map, and I began to combine images, feelings, possibilities, and unexpected elements. Images started to form in my mind, and then I started drawing designs."
